Sausage and Beans: 1 pound chorizo
Break
Chorizo into pieces and lightly sauté in a heavy skillet. Remove to
a large, heavy pot. Cut the other sausage into 1 inch chunks and gently
sauté in the fat from the Chorizo. Remove and put with the Chorizo. Add the ham to the chorizo and sausage. Gently sauté the garlic and onion in the remaining fat and add to the sausages. Add the beans and enough beef broth, stock or bouillon to cover. Add the Epazote, bay leaf and chilies and Scorpion Bay De Arbol Hot Sauce adjust heat to maintain a simmer. Cover and cook for about 30 minutes. Remove from heat, stir in the cilantro and serve. This is excellent served with fresh warm tortillas. |
